Honestly there’s not much of a cool story to this. I just randomly got an urge to make a recipe with grapes because I think they’re sorely underused, and somehow thought peanut butter jelly and salad should have a baby.
Honestly how I got there’s a mystery but I’m glad I did. What I did was whip up a peanut dressing with a good hit of acid and a little spice and paired it with grilled chicken and the sweetest grapes I could find.
I ended up with a really cool childhood meets adulthood plate of food that I’m really into. And this is coming from a salad hater. So let’s get into it, yeah?

Poké, a bowl a la free form sushi, found all over Hawaii, has become my favorite thing to eat lately. I have already created one variant, but let’s be real, finding sushi grade fish can be tricky or downright expensive. Enter my ride or die, imitation crab, or krab if you’re tight like that.
This dish is not only affordable and accessible. It’s also light, flavorful, and perfect if you’re lazy because there’s a seven minute cook time. The only thing you make is the ginger soy dressing. And of course the best part of any salad or poké situation, CUSTOMIZATION. So go nuts with your toppings!

My last nomadic-esque stint in Chicago ignited a massive fire in my heart for poké. There happened to be a poké joint near where I was staying and after one bowl I was hopelessly devoted. Why wouldn’t I be? Poké is essentially a sushi/salad hybrid. You can get marinated fish of your choice served over either greens or rice with all the accoutrements your heart could desire.
